Easy & Delicious Apple Cobbler
Baking an apple cobbler can be as intricate or as easy as you wish. But the easy variety tastes every bit as good as the intricate, so why not bake the easy way?
Obviously, the most important ingredient in apple cobbler is the apple. You can use baking apples, but you might want to consider Granny Smith apples as they have a slightly more tart flavor followed by a burst of sweetness. You can use that to your advantage in this easy apple cobbler recipe.
Then, don’t be afraid to use Bisquik instead of a flour mixture. It serves the same purpose and we’re going to jazz it up a bit anyway.
Okay, let’s cobble. You will need:
- 2 – 2 1/2 pounds of Granny Smith apples
- 2 cups of Bisquik
- 2 cups of white sugar
- 1 cup of brown sugar
- 2 sticks of butter + 1/2 cup more for the crust
- 1 tbsp of cinnamon
- 1/2 tbsp of nutmeg
- 2 eggs
- 1 tbsp of vanilla
Preheat your oven to 400 degrees.
Peel and core about 2 to 2 1/2 pounds of Granny Smith apples – about 8-10 apples. Dice into 1/4 to 1/2 inch pieces. You may wish to dash the apples with lemon juice to keep the firm and fresh. Put the apples in a bowl and toss them in 1 cup of white sugar. Cover in a baking dish and put in the fridge.
In a large bowl, combine 2 cups of white sugar and 1 cup of brown sugar. The brown sugar will give your cobbler a subtle but tasty nutty taste.
Add 2 cups of Bisquik and combine. Withdraw 1 1/2 cup of the Bisquik and sugar mixture and set aside.
Cut in to the first Bisquik/sugar mixture 2 sticks of butter to make m&m size pieces.
Drain excess liquid from the apple bowl, add the set aside Bisquik mixture with the apples and toss about. Add the cinnamon and nutmeg and thoroughly cover the apples.
Beat two eggs and add to the first Bisquick and sugar mixture until the eggs completely absorb the Bisquik. Add vanilla. Form two inch sized oblongs and press into the apples. Take a small pat of butter – about 1/4 inch thick and place it on top of each oblong.
Bake at 400 degrees for 45 minutes or until the juices come up over the sides of the oblongs.
