Sweet Cherry Cobbler

I can still remember the wonderful smell of my Grandmothers Sweet Cherry Cobbler baking in the oven. She had many wonderful recipes, but this was one of her best deserts for a Sunday family gathering. While some people prefer to use biscuit mix in place of the home made biscuits, I do not as my Grandmother always made them from scratch. The end result with making home made biscuits is the mouth watering taste and texture.

Ingredients:

  • 1 1/2 lb Fresh Sweet Cherries (Sliced in half to remove pits)
  • 1/4 C sugar
  • 1/2 C Water
  • 1 T Corn Starch

Biscuit Topping:

  • 1 cups flour
  • 2 teaspoons baking powder
  • pinch of teaspoon baking soda
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1/2 cup buttermilk or milk (cold)

Have ready a 9 x 9 square baking dish coated with non stick cooking spray

Preheat your oven to 450 degrees

Pour into a medium sauce pan the 1/2 cup of water. In a small bowl mix thoroughly the 1/4 cup of sugar and the 1 tablespoon of corn starch, next add the mixture of sugar and corn starch to the water, turn on stove burner to high. Stir mixture constantly while bringing it to a boil, let mixture boil for approximately one minute, then turn off. Add into the water mixture the 1 1/2 pounds of sweet cherries, mix well, then pour entire mixture into the 9 x 9 baking dish.

In a medium bowl, thoroughly mix together flour, baking powder, baking soda, sugar and salt. Cut butter into small cubes, using a fork cut the butter into the flour mixture until it looks like small peas.

Next, form a small well in the center of the flour mixture, pour the entire buttermilk or milk into the well and stir lightly until the dough forms a sticky mass. Using a tablespoon, scoop up a heaping serving of the dough and drop it onto the cherry mixture. Repeat with remaining dough, leaving small spaces between dough drops, until the entire top surface is covered.

Bake in your preheated 400 degree oven for approximately 20 minutes, or until the tops of the biscuits are golden brown.

Serve the cherry cobbler while warm and enjoy.
