Peach Cobbler--------

Not Grandma’s Peach Cobbler

Can you just smell that sweet cinnamon filling the air? Is it a pie, cake or cinnamon rolls? I love the smell of home cooked foods. One of my favorite recipes is mock peach cobbler. It doesn’t take long to prepare or cook, but the family and guests will love it.

You will need an 8 x 8 pan or a pan of similar size. Gather one can of pie ready peaches or 3 to 4 medium size fresh peaches. You will need cloves, nutmeg, cinnamon, and butter or margarine. Have a package of your favorite shortbread or butter cookies ready, too.

Preheat the oven to 350 degrees.

Spray the pan with non-stick spray, or spread a layer of butter on the bottom and sides.

Place a layer of cookies on the bottom of the pan. Crush the rest by rolling a rolling pin over a zipper plastic bag filled with the left over cookies. Fill in any spaces on the bottom of the pans with some of the crumbs.

Pour your can of pie ready peaches or your freshly sliced peaches over the cookie crust. The fresh peaches will create their own juices as they cook so no liquid is required.

Sprinkle 1/8-teaspoon each of nutmeg, cinnamon, and cloves over top of peaches. When using fresh peaches, sprinkle one to two teaspoons of sugar or sugar substitute over peaches as well.

Cover peaches and spices with remaining cookie crumbs.

Spread around 2 tablespoons of margarine or butter over top crust of cookies.

Bake at 350 for 20 minutes.

Enjoy warm with ice cream or cooled with whipping cream.

Try variations with strawberry, blueberry or apple fillings. Also try a variation of cookies from homemade peanut butter to chewy chocolate chip. Canned croissants or cinnamon rolls would do nicely for a brunch with the ladies. Still do the crushed cookie on top for a crisp effect.
